Zutaten für 4 Portionen
1 kg Kartoffeln, mehligkochend
150 g Zwiebeln
100 g Räucherspeck
1.5 l Fleischbrühe, kräftig
1 Prise Salz
1 Prise Pfeffer, schwarz, frisch gemahlen
1 Prise Muskatnuss, frisch gerieben
1 EL Pflanzenöl
Zutaten für die Einlage
1 Bund Suppengrün (Sellerie, Möhren, Lauch)
1 Bund Majoran
4 Stk Bockwürstchen oder Wiener Würstchen

Die beste Basis für jede Suppe ist eine kräftige Brühe. Am besten ist es, die für dieses Rezept benötigte Fleischbrühe selber zu machen. Das ist nicht schwer, sie kann gleich in größeren Mengen zubereitet werden und was nicht gebraucht wird, wird eingefroren.

Bei den Kartoffeln zu einer mehlig kochenden Sorte greifen. Sie haben einen hohen Stärkegehalt, zerfallen bereits beim Kochen und die Suppe erhält eine schöne Bindung
